Hanukkah, the Jewish holiday of lights is also about eating fried food. One of the main dishes in this 8 days holiday are the Levivot (Latkes in Yiddish, the east-European Jewish dialect) – Rösti style patties made from grated potatoes, that are of course fried. We decided to make our own modern version of Levivot in a vibrant purple color from beetroot and almonds. Our patties are gluten free, very easy to make and low-fat oven-baked. You can make this quick recipe as long as you can get fresh beetroot from your local market, even long after the holidays.

Preparation
- Peel the beetroot and grate it into a bowl.
- Add all the other dry ingredients and mix with a table spoon. Let is rest for 15 minutes.
- Preheat the oven to 180°C (200°C if you have a weak oven).
- Prepare a baking tray with a sheet of baking paper.
- Form small patties and lay them on the baking tray. Press them lightly to flatten them so they will be 1 cm thick.
- Drizzle a bit of olive oil on each patty and bake for about 20 minutes for each side, until the outer layer of the patties is crispy.
- Serve warm with your favorite sauce like soy yogurt, tahini sauce, guacamole or apple sauce.
