Could we have it all?
With this concept in mind, we developed a delicious chocolate and peanut butter cookies recipe, without refined oils, low in gluten, low in sugar and high in nutritional fibers, yet super easy to make. The CHOPies are great for breakfast, lunch, and dinner, just watch out for your cookie jar if not hidden from the cookie monsters…

Preparation
- Mix all of the dry ingredients in a large bowl.
- Add the wet ingredients and mix well.
- Preheat the oven to 190°C (or a bit higher temperature for a weak oven).
- Prepare a 30 cm x 20 cm baking tray with a sheet of baking paper.
- Pour the dough onto the baking tray and level it down using a wet spoon. Push the dough gently in order to keep the texture a bit fluffy.
- Cut the dough along and across to form the cookies before baking them. You should aim to get between 40-60 cookies (5-6 rows and 8-10 columns) for the above quantity.
- Bake for about 15 minutes until the oat flakes are golden-browned.
- Lower the oven temperature to 130°C and dry the cookies for about 40-60 more minutes, until the cookies in the center are dried.
- Cool down completely for a few hours.
- Gently remove the cookies into a sealed cookie jar or box.
